    With apples coming in through the TEFAP program, we thought the following recipes could be helpful:
    Apple Pancakes
    Serves 6

    3/4 cup nonfat milk
    2 large eggs whites
    1 tablespoon honey
    6 tablespoons sugar-free maple syrup
    1 medium apple, diced
    3/4 cup all-purpose flour
    3/4 cup whole-wheat flour
    2 teaspoons baking powder
    1/2 teaspoon baking soda

    Preheat the oven to 250 degrees. Put the apple in a microwave-safe bowl and tightly cover with plastic wrap; microwave on high until softened, about 2 minutes.

    In a large bowl, whisk the flours, baking powder, baking soda and salt. In a small bowl, whisk the buttermilk, nonfat milk, eggs and honey, then slowly add the dry ingredients, stirring until just combined.

    Heat a large nonstick griddle or skillet over medium heat. Spoon 1/4 cup batter onto the griddle for each pancake and sprinkle each with apple, then drizzle a little more batter over the apple. Cook until the tops are bubbly and the edges are dry, about 2 minutes. Flip and cook until golden brown, 1 to 2 more minutes. Keep the pancakes warm on a baking sheet in the oven while making the rest.

    Apple and Cinnamon Oatmeal
    Serves 2

    1 cup rolled oats
    2 cups water
    1/4 teaspoon salt
    2 cups apple juice or cider
    1 teaspoon cinnamon
    1 apple, cored and chopped

    Cook the oats in juice and cinnamon instead of water. Top with the apple. If you want the apple to be soft and warm, cook it along with the oats.

    Apple Chicken Salad
    Serves 8

    2 cups cooked chicken breast, chopped
    2 stalks celery, diced
    2 green onions, chopped
    1 medium apple, finely diced
    3 tablespoons walnuts, chopped
    1/4 cup light mayonnaise
    1/4 cup plain, fat-free yogurt
    1/2 lemon, juiced
    1/8 teaspoon ground black pepper

    In a medium bowl, combine the chicken, celery, green onions, apple, and walnuts. In a separate small bowl, whisk together the mayonnaise, yogurt, lemon juice and pepper. Pour the mayonnaise/yogurt mixture over the chicken and gently stir to coat. Serve salad over your choice of lettuce leaves, bread or crackers.

    Broccoli Apple Salad
    Serves 4

    1 large crown and stem of broccoli, chopped
    2 apples, chopped

    1 lemon, juiced
    1 tablespoon olive oil
    salt and pepper

    Alternate Dressing:
    1 tablespoon yogurt
    1 teaspoon olive oil
    1 teaspoon lemon juice
    1 teaspoon fresh dill, chopped
    salt and pepper

    In a large bowl, combine chopped broccoli and apples. In a smaller bowl, mix ingredients for either the dressing or alternate dressing. Pour dressing/alternate dressing over broccoli and apple mixture. Toss to coat.

    Apple Crisp
    Serves 6

    1 small apple
    1/3 cup margarine
    1/3 cup oats
    1/3 cup whole wheat flour
    1/3 cup brown sugar
    2 tablespoon ground cinnamon
    1/4 teaspoon ground nutmeg

    Line apples in small pie plate. Combine dry ingredients, cutting margarine into mixture, combining into a crumble with your hands. Press mixture over top of apples, sprinkling a few loose oats on top (this step tales great and looks pretty too!) and bake at 350 degrees for 45 mins. Delicious on it’s own or over ice cream!
