A delicious and simple recipe, our Caprese Roasted Asparagus makes an amazing side dish for any barbeque or Italian dinner.
1 lb asparagus, trimmed
2 tbsp oil
2 cups grape tomatoes, halved
1 ½ cups mozzarella
balsamic dressing, to taste
salt, to taste
pepper, to taste
basil, for garnish

Preheat oven to 400 degrees.

Line a baking sheet with foil and spray with non-stick spray

Place asparagus on one side of the pan and tomatoes on the other

Drizzle the vegetables with oil and sprinkle with salt and pepper

Cook in oven for 10 minutes

Half way through, top the asparagus with mozzarella

Remove the baking sheet from the oven and place asparagus on serving plate, top with the tomatoes, basil and balsamic dressing.
