Potato Leek Soup. Healthy style. This recipe, adapted from www.onceuponachef.com, could not be more delicious and nutritious.
Cut off and discard the greenes of the leeks
Cut the leeks lengthwise and wash well to remove any dirt
Thinly slice the whites of the leeks
Peel and cube the potatoes
Place leeks and butter in a large pot and cook over medium heat until leeks are tender without becoming brown, about 5 to 7 minutes
Add potatoes, broth, salt, and pepper to the pot
Bring to a boil and then turn down heat
Cover and simmer until potatoes are tender, about 30 minutes
Using a blender or immersion blender, blend soup to desired consistency
If using a blender, return to pot, add evaporated milk, and simmer for 2 to 3 minutes
Serve and enjoy
