A delicious salad filled with antioxidants and vitamins which is also refreshing and delicious.
1. Peel, pit, and dice mangoes and avocado into around ½ inch cubes. Remove stems from mint, basil, and cilantro and roughly chop. Rinse blueberries and lime.
2. Combine the mango, avocado, blueberries, mint, basil, and cilantro in a medium bowl. Set bowl aside in the fridge to stay fresh.
3. Add olive oil and salt to a small bowl then, using a microplane or the smallest holes on a box grater, zest lime into the bowl, taking care to only remove the green outer layer. After zesting, cut lime in half and squeeze both halves into the bowl, using a clean hand to strain out the seeds. Stir to combine.
4. Mix dressing into salad and enjoy!
