 3 cups Watermelon
 8 Strawberries
 1 cup Tomatillos
 1 Shallot
 12 Mint leaves
 2 tbsp Olive oil
 1 ½ tbsp Balsamic vinegar
 ½ tsp Ground black pepper
 salt to taste

1. Remove the rind and seeds of the watermelon, the leaves of the strawberries, and the husks of the tomatillo. Chop all into bite-sized pieces.

2. Finely chop shallot and mint leaves.

3. Put watermelon, strawberries, tomatillo and shallots in a bowl and gently toss.

4. Drizzle olive oil and balsamic vinegar and gently toss once more.

5. Sprinkle black pepper and top with mint.

6. Season with a little salt and serve immediately.
